Joe Ibarra, the Mexican chef is on cloud nine when he speaks about Pope Francis and his eating habits. He was tasked with the job of making food for Pope Francis during his 5-day Mexican trip. Even though he was forewarned of Pope’s dietary requirements, he was given creative freedom to decide what to serve up for Pope.
It was not the first time that Joe Ibarra was selected to cook for the head of the Church. Four years ago, when Pope Benedict xvi visited the nation, he was chosen to cook for him. “Being chosen to cook for the Pope is an indication of the quality of your work and the confidence people have in you. It’s an experience that can’t be matched”, Joe Ibarra said.
Joe Ibarra, along with his team of five chefs, made delicious food for Pope Francis. As Pope Francis has some dietary restrictions, they could not make anything too spicy or greasy that might cause digestive problems. All fruits had to be seedless to aid digestion. The Pope even brought his own drinking water from the Vatican because of its low sodium content.
Ibarra said that Pope Francis chose simple dishes like rice, pasta, soup and bread. Sometimes he was given orange, mandarin or green juice.
